It is called pepper soup in Nigeria and light soup in Ghana. It is made with meat stock water, then seasoned with West African spices and seasoning which we have combined them into our pepper soup seasoning.

This soup is packed with spices that can help to fight cold and flu during cold seasons. The soup also helps with nausea. This is the reason why in our culture it is made for women during pregnancy and after delivering a baby. This soup is very comforting. Though it is made year round back home in Ghana and Nigeria, in the United States it is appreciated mostly during fall and winner. It wraps around you like a blanket.

This soup can be spicy in that it has heat, so drink with care.

Pepper soup spice mix
Goat meat, cow leg and turkey pepper soup

Recipe

  1. 2 pounds of goat, turkey, chicken, or beef meat.
  2. Rinse the meat then cut up onions onto the meat, then add a bit of salt.
  3. Add 4 to 5 cups of water and place it on stove (medium heat)
  4. (Optional), If you want to increase the heat in the soup add blend 1 habanero and add it to the meat. (Our pepper soup mix had dry habanero peppers and cayenne pepper so it has heat already).
  5. Let the meat cook and tenderize for about 20 minutes.
  6. Add about 2 teaspoon of the pepper soup spice mix into the soup and stir. Taste it and adjust it by adding more if needed according to your preferences.
  7. (Optional) to make Ghanaian version, add 1 8oz can of tomato sauce to the soup. Add a bit of water is the water has reduced from the meat. Let it cook for another 15 minutes or until meat is tender. At this point reduce heat to medium- low.
  8. Adjust with salt if needed.
  9. Scoop some soup into a bowl and enjoy by itself or pair it with fufu, yams or potatoes.

Harissa seasoning

Recipe

  1. 1 pounds or 16 ounces. of (Chicken, Beef, fish, vegetables, tofu, and mushrooms)
  2. Rinse your Chicken drums or vegetables.
  3. Add salt or any salt alternative.
  4. Add 2 teaspoon of Harissa seasoning to your meat.
  5. Cut up some bell peppers, onions and garlic and add to meat and toss them together.
  6. Add 1-2 teaspoon(s) of oil (any oil)
  7. (Optional) Place ingredients in a ziplock bag or a bowl, close it and let it marinated for 30 minutes to 2 hours in a refrigerator.
  8. Grill or bake (375 F) the chicken along with the peppers in an oven for about 30 – 45 minutes. To keep meat juicy wrap it in foil or use an air fryer.
  9. (Optional) Place Chicken and peppers into cast iron pan. Cover it with foil and let it slowly cook in the oven at 375 F for 30 – 45 minutes. This will give you a juicy delicious and flavorful meat with a little sauce made by the combination of the chicken juice, harissa spice, onion, bell peppers and garlic.
  10. Pair Harissa chicken drums with brown butter Couscous or rice.

Jollof Rice spice HERE

Jollof rice is a rice dish popular in West African countries. It is rice simmered in blend of tomatoes, peppers and other spices.

Afromeals Jollof rice spice

1 (6oz) can tomato paste

1-2 cups of water or meat stock

1 onion

6 cloves of garlic

(optional) 1 tsp cayenne pepper powder

(optional) 1 habanero pepper

1/2 cup oil (any oil of your choice)

2 plum tomatoes

2 cups of mini-sweet peppers or 2 red bell peppers

51/2 cups of parboiled rice or Jasmine rice

(Optional) 6 bouillon cubes or 2 tbsp of bouillon powder (Maggi or Knorr or vegetable bouillon powder or cubes)

Salt to taste

Directions

  1. (Optional step) Wash rice and keep in hot water and put it aside (this helps to soften the rice.
  2. In a blend your tomatoes, peppers, garlic, and onions.
  3. Heat up pan/pot under medium-high temperature, then add oil
  4. Add your tomato paste and fry it in the oil. Stir the paste in the oil for about 3 minutes in the oil. Do not stop stirring until tomato paste is done frying. At this point heat under the pan is medium-low or tomato paste will burn.
  5. Once the tomato paste is done frying in oil, add the blended ingredients carefully to the tomato paste and stir for a few seconds. Be careful as the sauce/stew will start to pop out. Once blended ingredients are in increase the heat to medium heat.
  6. Add your bouillon powder or cubes and 1/4 afromeals Jollof seasoning. Allow the stew to cook for about 10 minutes under medium heat. Make sure to stir it every 3 minutes so it doesn’t burn.
  7. After 10 minutes, drain the water from your rice and add it to the stew. Stir it and allow the rice to mix well with the stew.
  8. Add 1 cup of meat stock and stir.
  9. Cover the pot with foil and close the pot with a lid.
  10. Let rice cook under low heat until it is soft.
  11. (Optional step) once the rice is soft cut up some red onion and colorful bell peppers and stir it into the rice and serve with fried plantain and any type of meat, or seafood.

Jerk spice is a popular spice in the Islands. Historians believe that jerk spice was developed by Marrons who were African slaves living in Jamaica.

One reason why I love the Jamaican culture and food is because it is similar to some of the West African foods. In fact Ghanaian slaves (my ancestors) specifically Akan tribe were taken to Jamaica and they were referred to as Koromantis.

Growing up in Ghana we ate more fish than meat or even chicken. Fish was in our daily meal. It was in our stews, soups, or sauces. This is because fish was easier to get and more affordable for the middle and the lower class in Ghana.

Eating fish every day can get old and boring so for that reason, we found many ways of cooking fish. Sometimes we make fried fish, grilled fish, smoked fish, dry fish, etc. In consuming fish on a daily basis we learned how to season it very well so that it is enjoyable. This is how we came up with this Afromeals Fish Rub!! This fish rub is also amazing with other seafood.

Fresh fish is always a great option however if you have frozen fish that works too. Take the time to defrost it.

  1. Remove scales from fish using a spoon or a knife to scrape the fish. Remove the gills and fins from the fish using cooking scissors and rinse the fish off with cold water. Rinsing your fish with hot water will cook the fish.
  2. (Optional) If you have lemon or lime fruit or juice, use it to rinse the fish. My family always rinsed the fish with lime or lemon to remove the fish smell and also the slime that some of the fish have. Once you rinse the fish with lemon juice, rinse it with cold water again.
  3. Pat dry your fish with a paper towel. On a cutting board, cut your fish into three pieces or you can keep the fish as a whole and make 2-3 slight cuts diagonally in the front and the back of the fish. This would help the fish cook through if you are not cutting it up.
  4. Add salt or bouillon powder to your fish according to your sodium tolerance. (Note: there is no salt or bouillon powder in our Fish rub)
  5. Rub about 2-3 teaspoon of Afromeal fish seasoning to your fish. Make sure to get it on the outside and the inside of the fish. Then add 1 tablespoon of oil to the fish.
  6. (Optional) Cut up some fresh onion and bell peppers and add it to the fish, then add about 1-2 teaspoons of oil to the fish.
  7. (Optional) place fish in a ziplock bag and let it marinate for about 30 minutes – 2 hours in a refrigerator.
  8. Place your fish on a grill, an air fryer, or bake it for about 20 minutes. For air, fryer bakes it at 375 F. To keep fish juicy on the outside wrap it with foil. However, if you prefer it a bit crunchy, leave the foil off.
  9. To fry fish, heat up oil in a pan, then slowly place the fish in the oil. Be careful as the fish would cause the oil to pop. Do not turn fish until you see it browning on the part facing down in the oil. If you turn it before time, fish will break apart in the oil :(. Carefully flip it to the next side and let that part fry as well. (Be careful as oil might pop while flipping it.). Once done frying rest it on a paper towel.
  10. You can pair fish with fried or baked plantains, potatoes, rice and stew or beans.

This fried rice carries a distinction from all the others. It is different, it is easy to make and the taste is unlike anything you’ve ever tasted. It’s unlike anything you’ve had before and it is because of our amazing seasoning! Try our Fried rice seasoning

Ingredients for Fried rice

1 cup of cooked rice (Jasmine rice) 

1⁄2 cup of mixed vegetable 

1⁄2 small onion (chopped) 

1 clove of garlic (minced) 

1⁄4 tsp of cayenne pepper (optional) 

2 -3 tsp of Afromeals fried rice seasoning

1 cube of Maggie or 1 tsp of bouillon powder (Knorr)

4 -5 counts of cooked shrimp (Large or Jumbo) 

Directions 

1. Into a pan under medium-high heat add 2 tablespoons of oil 

2. Add onion and garlic and stir for a minute 

3. Add the shrimp and stir for a minute, then add the cup of mixed vegetables. Sautee shrimps and vegetables for a few minutes (2) and lower heat to medium-low. 

4. Add Fried rice seasoning, cayenne pepper (optional), and bouillon cubes or powder, then stir. 

5. Add the cup of cooked rice to the sauteed vegetables and shrimps then keep stirring for about five minutes.  Add salt if needed. Taste and adjust with a little more of the seasoning if needed.

6. Let it cool then enjoy!

Ingredients for Fried rice

1 cup of cooked rice (Jasmine rice)

Directions 

1. Into a pan under medium-high heat add 2 tablespoons of oil 

2. Add onion and garlic and stir for a minute 

3. Add the shrimp and stir for a minute, then add the cup of mixed vegetables. Sautee shrimps and vegetables for a few minutes (2) and lower heat to medium-low. 

4. Add Italian seasoning, Berbere spice, cayenne pepper (optional), and bouillon cubes or powder, then stir. 

5. Add the cup of cooked rice to the sauteed vegetables and shrimps then keep stirring for about five minutes. Add salt if needed.

6. Let it cool then enjoy!

Ingredients for dough (crust)

3.5 cups of flour

8 tablespoon of butter or (1 stick of butter)

1 tsp of salt

1/4 tsp baking powder

1/3 cup of sugar (optional)

water

Ingredients for Meat filling

16 oz or 1 pound of ground meat

1 cup Mixed vegetables

2 cloves of garlic

1 small onion

2 tablespoon of olive oil (or preferred oil)

2 tablespoon of Afromeals Fried Rice Spice

Plantains or potatoes (optional)

Habanero peppers (optional)

Bouillon powder or salt to taste (according to your preference)

Other ingredients

Egg to help close the pie and also to coat the crust!
